Pineapple Yam Bake

The R.W. Knudsen Family® products used in this recipe:


Ingredients:
  • Horizon Organic Unsalted butter
  • 3 pounds Earthbound Farms garnet yams
  • 1/2 cup light brown sugar
  • 2 tablespoons Arrowhead Mills unbleached white flour
  • 1 teaspoon orange rind, finely grated
  • 1 teaspoon lemon rind, finely grated 
  • 1/4 teaspoon kosher salt or coarse sea salt
  • 1/2 teaspoon cinnamon
  • 2 teaspoons ground ginger
  • 1/4 teaspoon freshly grated nutmeg
  • 1 tablespoon Horizon Organic Unsalted Butter
  • 1 cup fresh pineapple (cut into 1/2-inch cubes)
  • 1 cup R.W. Knudsen Family® Organic Pineapple Juice


Directions:

  • Preheat oven to 350°F. Butter a 13x9-inch casserole dish.
  • In a large stockpot of boiling salt water, boil the yams in their jackets until tender but firm, about 10 minutes. Cool on a baking sheet or work surface.  When cool enough to handle, peel and slice into 3/4-inch rounds.
  • In a small bowl combine the brown sugar, flour, orange and lemon zest, salt, cinnamon, ginger and nutmeg. Cut the butter into the mixture until coarse crumbs form.
  • Place 1/2 of the yams in the prepared casserole dish. Cover with half of the seasoned sugar mixture.
  • Add the remaining half of the yams, and cover with the diced pineapple. Sprinkle with the remaining seasoned sugar mixture. Pour pineapple juice over all ingredients in casserole dish and bake for 45 minutes.
