Very Veggie Gazpacho
The R.W. Knudsen Family® products used in this recipe:
Ingredients:
- 1 quart R.W. Knudsen Family® Spicy Very Veggie® Juice
- 1 medium seedless cucumber
- 3 stalks celery
- 3 green onions
- 3 medium tomatoes
- 1 cup loosely packed cilantro plus 6 sprigs
- 2 tablespoons lemon juice
- 1 large clove garlic, chopped
- 1 teaspoon chopped jalapeño (optional)
- Salt and pepper, to taste
- 1 avocado, for garnish
Directions:
- Finely chop the cucumber, celery, onions, tomatoes and 1 cup cilantro; combine in a large bowl.
- Place half of the vegetables, the garlic and half of the Spicy Very Veggie® Juice in bowl of a food processor.
- Add jalapeño if desired.
- Process until smooth.
- Return the mixture back to the bowl with the remaining chopped vegetables, and add remaining Spicy Very Veggie®, lemon juice, salt and pepper.
- Chill well before serving.
- To serve, pour gazpacho into soup bowls and garnish with sliced avocado and sprigs of cilantro.
