Apple Pancakes with Cider & Spice Syrup

Ingredients

  • SYRUP
  • 1/2 cup R.W. Knudsen Family® Cider & Spice Juice
  • 1 tablespoon corn starch
  • 1/2 cup pure maple syrup
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • PANCAKES
  • 2 cups all purpose flour
  • 1/4 cup firmly packed brown sugar
  • 2 teaspoons baking soda
  • 3/4 teaspoon fine sea salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 1/4 cups R.W. Knudsen Family® Cider & Spice Juice
  • 3/4 cup Santa Cruz Organic® Apple Sauce
  • 2 large eggs, slightly beaten
  • 3 tablespoons butter melted

Directions

  1. To Make Syrup: WHISK juice and corn starch in small saucepan until blended. Add syrup, cinnamon and nutmeg. Bring to a boil over medium-high heat. Reduce heat to low, cook 2 minutes, stirring occasionally.
  2. To Make Pancakes: HEAT griddle to 350°F. Stir flour, brown sugar, baking soda, salt, cinnamon and nutmeg in large bowl until blended. Add juice, apple sauce, eggs and 2 tablespoons butter; stir just until combined.
  3. BRUSH griddle with remaining butter. Pour 1/4 cup batter onto hot griddle for each pancake. Cook about 2 minutes per side or until golden. Serve with syrup.
