Apple Pancakes with Cider & Spice Syrup

Ingredients
- SYRUP
- 1/2 cup R.W. Knudsen Family® Cider & Spice Juice
- 1 tbsp. corn starch
- 1/2 cup pure maple syrup
- 1/4 tsp. ground cinnamon
- 1/8 tsp. ground nutmeg
- PANCAKES
- 2 cups all purpose flour
- 1/4 cup firmly packed brown sugar
- 2 tsps. baking soda
- 3/4 tsp. fine sea salt
- 1/2 tsp. ground cinnamon
- 1/4 tsp. ground nutmeg
- 1 1/4 cups R.W. Knudsen Family® Cider & Spice Juice
- 3/4 cup Santa Cruz Organic® Apple Sauce
- 2 large eggs, slightly beaten
- 3 tbsps. butter
Directions
- Step 1
To Make Syrup: WHISK juice and corn starch in small saucepan until blended. Add syrup, cinnamon and nutmeg. Bring to a boil over medium-high heat. Reduce heat to low, cook 2 minutes, stirring occasionally.
- Step 2
To Make Pancakes: HEAT griddle to 350°F. Stir flour, brown sugar, baking soda, salt, cinnamon and nutmeg in large bowl until blended. Add juice, apple sauce, eggs and 2 tablespoons butter; stir just until combined.
- Step 3
BRUSH griddle with remaining butter. Pour 1/4 cup batter onto hot griddle for each pancake. Cook about 2 minutes per side or until golden. Serve with syrup.
