Apple Pie Rice Pudding

  • 2 3/4 cups R.W. Knudsen Family® Organic Apple Juice
  • 1/2 cup uncooked white rice
  • 1/2 teaspoon salt
  • 1 cup vanilla almond milk or milk
  • 1 tablespoon packed brown sugar or cane brown sugar
  • 3/4 teaspoon vanilla extract
  • 3/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg


  1. BRING juice, rice and salt to boil in medium saucepan over high heat. Reduce to simmer. Cover. Cook about 40 minutes or until liquid is almost absorbed.
  2. REMOVE lid. Stir in almond milk, brown sugar, vanilla, cinnamon and nutmeg. Simmer, stirring occasionally, until rice is tender and mixture is creamy. Serve warm or at room temperature.
