Cherry Pie with Almond Whipped Cream

Ingredients

  • CHERRY PIE FILLING
  • 3/4 cup R.W. Knudsen Family® Cherry Cider Flavored Juice Blend
  • 1 teaspoon Santa Cruz Organic® Pure Lemon Juice
  • 3/4 cup Sugar
  • 3 tablespoons corn starch
  • 1/2 teaspoon Ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 5 cups frozen tart red cherries, thawed and drained
  • 1/4 teaspoon almond extract
  • deep-dish pie crust, baked
  • ALMOND WHIPPED CREAM
  • 1/2 cup cold heavy cream
  • 2 ounces cream cheese, softened
  • 1 1/2 tablespoons Powdered sugar
  • 1/8 teaspoon almond extract

Directions

  • Step 1

    WHISK juices, sugar, corn starch, cinnamon and nutmeg in large saucepan. Add cherries. Bring to a boil over medium-high heat, stirring constantly. Reduce heat to low. Cook 5 minutes, stirring frequently. Stir in almond extract. Pour into prepared pie crust. Chill 2 hours or until set.

  • Step 2

    BEAT cream in large bowl with mixer on medium-high speed until soft peaks form. Beat in cream cheese, powdered sugar and almond extract until smooth. Cover and chill. Serve with pie.
