Ingredients

  • PUMPKIN FILLING AND NUT TOPPING
  • 1 pure pumpkin
  • 1/3 cup sugar, plus 1 1/2 tablespoons, divided
  • 1/2 teaspoon pumpkin spice
  • 2 cups heavy cream, chilled
  • 3 1/2 teaspoons vanilla, divided
  • 2/3 cup coarsely chopped pecans
  • CREPES
  • 3/4 cup Milk
  • 2 large eggs
  • 1 1/4 cups all purpose flour
  • 1 tablespoon Sugar
  • 1/4 teaspoon pumpkin pie spice
  • 1/4 teaspoon fine sea salt
  • 3/4 R.W. Knudsen Family® Sparkling Pumpkin Spice Flavored Beverage
  • 3 tablespoons Butter
  • 1/2 cup caramel ice cream topping

Directions

  • Step 1

    For filling: COMBINE pumpkin, 1/3 cup sugar and pumpkin spice in medium microwave-safe bowl. Partially cover. Microwave 3 minutes on HIGH. Chill completely. Beat cream and 2 teaspoons vanilla in medium bowl with electric mixer on high speed until stiff peaks form. Fold into cooled pumpkin mixture. Chill.

  • Step 2

    For crepes: COMBINE milk, eggs, flour, sugar, pumpkin pie spice and salt in blender container. Cover and process until smooth. Chill 30 minutes.

  • Step 3

    For nut topping: COMBINE nuts, remaining 1 1/2 teaspoons vanilla and 1 1/2 tablespoons sugar in small bowl.

  • Step 4

    ADD pumpkin spice beverage to crepe batter. Process just until combined. Heat 8-inch nonstick crepe pan or skillet over medium-high heat. Butter pan lightly. Pour in 1/4 cup batter, tilting skillet to coat bottom of pan. Cook 60 to 90 seconds or until top no longer looks wet. Turn crepe over. Cook additional 30 to 45 seconds. Repeat with remaining batter to make 9 more crepes, coating skillet with butter each time.

  • Step 5

    SPREAD half of crepe with 1/2 cup filling; fold. Drizzle with caramel topping. Sprinkle with nut mixture. Repeat with remaining crepes.
