Pork Roast with Black Cherry Balsamic Sauce

  • 1 (3 lb.) boneless pork loin roast
  • 1 teaspoon dried thyme leaves
  • 1 teaspoon sea salt
  • 1/2 teaspoon pepper
  • 1 cup R.W. Knudsen Family® Just Black Cherry® Juice
  • 1 tablespoon cornstarch
  • 1/2 cup dried cherries
  • 3 tablespoons firmly packed brown sugar
  • 2 tablespoons balsamic vinegar


  1. HEAT oven to 350°F. Place roast in shallow pan. Combine thyme, salt and pepper in small bowl. Rub over roast.
  2. ROAST, uncovered, 60 to 75 minutes or until internal temperature reaches 140° - 160°F. Tent with foil. Let rest 15 minutes.
  3. PLACE juice in small saucepan. Whisk in cornstarch until smooth. Stir in cherries, brown sugar and vinegar. Bring to boil, stirring constantly, until thickened. Serve pork with sauce.
