Pork Roast with Black Cherry Balsamic Sauce

Ingredients

  • 1 (3 lb.) boneless pork loin roast
  • 1 tsp. dried thyme leaves
  • 1 tsp. sea salt
  • 1/2 tsp. pepper
  • 1 cup R.W. Knudsen Family® Just Black Cherry® Juice
  • 1 tbsp. cornstarch
  • 1/2 cup dried cherries
  • 3 tbsps. firmly packed brown sugar
  • 2 tbsps. balsamic vinegar

Directions

  • Step 1

    HEAT oven to 350°F. Place roast in shallow pan. Combine thyme, salt and pepper in small bowl. Rub over roast.

  • Step 2

    ROAST, uncovered, 60 to 75 minutes or until internal temperature reaches 140° - 160°F. Tent with foil. Let rest 15 minutes.

  • Step 3

    PLACE juice in small saucepan. Whisk in cornstarch until smooth. Stir in cherries, brown sugar and vinegar. Bring to boil, stirring constantly, until thickened. Serve pork with sauce.
