Fall Harvest Slow Cooker Pulled Pork

Ingredients

  • 3 lbs. Boston Butt Roast
  • Fine sea salt and ground black pepper
  • 1 cup R.W. Knudsen Family® Sparkling Pumpkin Spice Flavored Beverage
  • 2 tbsps. natural hickory smoke flavor enhancer
  • 2/3 cup prepared hickory-smoked barbecue sauce
  • 6 dinner rolls, split
  • 3/4 lb. prepared shredded cole slaw, drained

Directions

  • Step 1

    POUR pumpkin spice beverage over roast. Season roast generously with and salt and pepper. Place fat side up in cooker. Cover with smoke flavor enhancer, if desired. Cover. Cook on HIGH 4 to 5 hours or Low 6 to 7 hours or until meat is fork tender.

  • Step 2

    DRAIN juices from slow cooker. Defat, if desired. Shred pork with two forks. Transfer to large bowl. Combine remaining 1 cup pan juices with 2/3 cup barbecue sauce in medium microwave-safe bowl. Microwave on HIGH 60 seconds or until heated through. Pour over pork. Stir to combine.

  • Step 3

    DIVIDE meat evenly, placing on bottom of buns. Top each with about 2 tablespoons cole slaw, if desired, and bun top.
