Caramel Apple Sweet Potato Casserole With Streusel Topping

  • 1/2 cup butter, softened, plus additional for coating pie plate
  • 1 1/2 R.W. Knudsen Family® Sparkling Caramel Apple Flavored Beverage
  • 1/2 teaspoon cornstarch
  • 4 medium sweet potatoes (about 2 lbs.), cooked* then cut into 1/2-inch cubes (5 cups)
  • 1 1/2 pounds Gala Apples, peeled, cored and cut into 1/2-inch cubes (4 cups)
  • 1 cup flour
  • 2/3 cup packed brown sugar
  • 1 teaspoon Ground cinnamon
  • 1/8 teaspoon ground nutmeg


  • Step 1

    HEAT oven to 400°F. Coat deep dish pie plate with butter.

  • Step 2

    *To cook sweet potatoes: Wash and peel potatoes. Puncture several times with fork. Place on microwave-safe dish. Cook on HIGH 4 to 5 minutes for first potato, plus 2 to 3 minutes for each additional potato, turning over potatoes halfway through cooking. Cook until just fork tender.

  • Step 3

    BLEND caramel apple beverage and cornstarch in large bowl until dissolved. Add sweet potatoes and apples. Stir to combine. Transfer into prepared pie plate. Cover with foil. Bake 40 minutes, stirring halfway through cook time.

  • Step 4

    COMBINE remaining 1/2 cup butter, flour, sugar, cinnamon and nutmeg in medium bowl with fork. Discard foil from casserole. Stir apple-sweet potato mixture. Distribute streusel evenly over casserole. Bake 20 to 25 minutes or until streusel is golden brown.
