Baby Kale Salad With Warm Maple-Pear Vinaigrette

  • Warm Maple-Pear Vinaigrette
  • 1/3 cup R.W. Knudsen Family® Spiced Pear Juice Blend
  • 1 tablespoon white balsamic vinegar
  • 1 tablespoon pure dark amber maple syrup
  • 1/4 teaspoon Salt
  • 1/8 teaspoon black pepper
  • 1/4 canola, sunflower or grapeseed oil
  • Baby Kale Salad
  • 1 mixed greens (baby kale, baby spinach and red and green chard)
  • 1 medium red onion, halved lengthwise and thinly sliced
  • 3 Anjou pears, cored and sliced lengthwise
  • 2 chevre goat cheese with herbs, crumbled
  • 1/3 cup sweetened dried cranberries
  • 1/3 cup caramelized pecans, chopped


  • Step 1

    COMBINE juice, vinegar, syrup, salt and pepper in small microwave-safe bowl. Whisk in oil gradually until well blended and slightly thickened.

  • Step 2

    DIVIDE greens evenly on salad plates. Top greens with onion, pears, cheese, cranberries and pecans.

  • Step 3

    MICROWAVE vinaigrette on HIGH 30 to 45 seconds or until warm. Drizzle vinaigrette over salad. Serve immediately.
