Carrot Sweet Potato Soup

Ingredients

  • 2 tablespoons olive oil
  • 1 cup chopped onion
  • 1 pound sweet potatoes, peeled and diced (2 small or 1 extra large)
  • 1 3/4 cups R.W. Knudsen Family® Organic Carrot Juice Blend
  • 1 (14.5 oz.) can vegetable broth
  • 1/2 teaspoon minced garlic
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 teaspoon fresh thyme leaves
  • Croutons, for garnish

Directions

  1. HEAT oil in large saucepan over medium heat. Add onion; cook 5 minutes, stirring occasionally.
  2. ADD sweet potatoes, carrot juice, broth, garlic, salt and pepper. Bring to a boil over high heat. Reduce heat to medium-low. Simmer, uncovered, 30 minutes or until sweet potato is completely tender.
  3. STIR in thyme.
  4. PROCESS mixture in blender container, in two batches, until smooth. Pour into large saucepan. Heat through. Garnish with croutons, if desired.
