Carrot Sweet Potato Soup

Ingredients
- 2 tablespoons olive oil
- 1 cup chopped onion
- 1 pound sweet potatoes, peeled and diced (2 small or 1 extra large)
- 1 3/4 cups R.W. Knudsen Family® Organic Carrot Juice Blend
- 1 vegetable broth
- 1/2 teaspoon minced garlic
- 1/2 teaspoon Salt
- 1/4 teaspoon pepper
- 1/2 teaspoon fresh thyme leaves
- Croutons, for garnish
Directions
- Step 1
HEAT oil in large saucepan over medium heat. Add onion; cook 5 minutes, stirring occasionally.
- Step 2
ADD sweet potatoes, carrot juice, broth, garlic, salt and pepper. Bring to a boil over high heat. Reduce heat to medium-low. Simmer, uncovered, 30 minutes or until sweet potato is completely tender.
- Step 3
STIR in thyme.
- Step 4
PROCESS mixture in blender container, in two batches, until smooth. Pour into large saucepan. Heat through. Garnish with croutons, if desired.
